While we have seen a spike in the number of cooking schools opening around the U.S.A, pastry schools have not seen the same interest. It is true that some culinary schools offer pastry programs, but those classes are far from their primary educational focus. That being said, the premier pastry schools have a concentrated curriculum that offers very focused training for a time period of three months for a certificate program, or a two year associates degree program.

Any pastry arts program relies heavily on the caliber of the instructor. The best instructors can make a basic curriculum feel like a rewarding and satisfying learning experience. This is one of the main reasons you should try to visit each culinary school you are considering. It’s a chance to interact with the students and the instructor. Don’t waste time with the admissions staff beyond what’s absolutely necessary. Since it is the admissions department job to try to sell prospective students on the school, you may not be receiving unbiased information. If it is available, try to sit in on a class to get a feel for them. Note the interaction between the students and the instructor. You should be able to tell immediately whether or not students are totally focused on learning and baking.

If it’s not possible to immediately visit a pastry school under consideration, see if any of the school’s alumni write blogs or similar online material. Schools should have a list of alumni who would be glad to speak with you about their time at pastry school.

These two methods should work well to help locate a quality pastry school. The question then becomes one of affordability. If a dedicated pastry arts program is too expensive, a community college is a good place to look to take some courses in baking or pastry arts. Although community college instructors may not have the same track record as a pastry school instructor, that doesn't mean they are poor instructors. If you’re looking to work in one of the premier bakeries in your area, however, you’ll be well served by attending an elite pastry school.
